Recipe: Beef Roast with Dried Fruit (Rival Crock Pot recipe, 1970's)

BEEF ROAST WITH DRIED FRUIT

2 onions, sliced
1 (3 to 4 pound) beef arm or boneless pot roast, 2-inches thick
4 lbs)
1 (11 ounce) package mixed dried fruit
3/4 cup beer
1 cup water
1 clove garlic, minced
1/4 cup packed brown sugar
1 teaspoon dried parsley flakes
1 bay leaf
1/4 teaspoon ground cinnamon
2 1/2 teaspoons salt
1/4 teaspoon pepper
6 Spiced apple rings (optional, for serving))

COOKER: 3 1/2 quarts

Place sliced onions in bottom of Crock-Pot and place roast on top (cut in half, if necessary, to fit easily). Cover with dried fruit.

Mix remaining ingredients except apple rings and pour over roast.

Cover crock pot and cook on LOW setting for 6 to 8 hours.

Serve garnished with spiced apple rings, if desired.

Makes 4 to 6 servings
