Thoughts regarding double cream for Kim in PA

Hi Kim...

According to the Cook's Thesaurus double cream (42% fat) is not available in the United States.
They list the following substitutes: heavy cream (this has a butterfat content of at least 36%) OR cr me fra che (as a dessert topping) OR egg custard (as a dessert topping).

Could your recipe could be made using cool whip or some other low-fat cream?
