Tip: Soft, chewy chocolate chip cookies

I am also a fan of soft, chewy cookies. THE BEST RECIPE, a cookbook by the editors of COOKS ILLUSTRATED magazine, includes a fabulous recipe for molasses spice cookies that stay soft for days.

From the same book I got advice for making soft and chewy chocolate chip cookies:

1. MELT the butter in the recipes, don't beat it--something about the way that melted butter binds with flour helps keep cookies chewy.
2. Add an extra egg yolk to the recipe.
3. And of course, make sure to underbake the cookies (and remember that they will bake an extra few minutes on the sheet after you take them from the oven, so they can look pretty underdone when you take them out).
