Recipe(tried): Kathy's Soft Chocolate Chip Cookies

Kathy's Soft Chocolate Chip Cookies
Makes approximately 9 dozen cookies

This is the recipe I developed after years of working on it to get a soft, chewy cookie. Hope you like it.

5 1/4 cup flour
2 1/4 tsp. baking soda
2 1/4 tsp. salt
1 1/2 cup solid shortening (Crisco)
3/4 cup soft Parkay (60% vegetable oil spread)
1 3/4 cup white sugar
1 3/4 cup brown sugar
4 eggs
3 tsp. vanilla
1 (12 oz) bag mini chocolate chips
1 cup chopped walnuts

*Cream Parkay, Crisco, and sugars. Add eggs and vanilla, beat till light and fluffy. Add flour, salt and soda. Beat till incorporated. Stir in chips and walnuts. Bake at 375 degrees until just starting to brown around edges. Cool and store in airtight conatiner. These freeze well.
