VKL .. Perhaps the difference in texture

of the Ice Water Cake is the difference also between the box mix cakes and the scratch ones. I noticed that what I may have perceived as dry may have been just a more dense crumb of the cake. Wedding cakes are sometimes more of a dense texture and the ones that I make for our customers is a more moist and airy kind, like that of a box mix. Many customers perfer the more moist type ..HOWEVER,this may not be the more traditional coarse grain ....(if you will)...type. Among the customers with which I have dealt, they perfer the moist type. At weddings that I have attended where another baker has made the cake and has used the more traditional dense textured cake, comments are often made to me that it isn't "as moist as yours"! So I guess it all depends which texture you are going for! Hope this helps! Six
