Yeast Pull Dates

Dear Yanira,

Welcome!

The "pull" date (date of expiration
of product, in this case yeast) is
as Margaret and Page have said, meant
for commercial bakers who leave their
yeast open on the counter all day.

We keep our yeast in a clear Mason
style jar in the refrigerator (thank
you, high end sauce company) with its
own screw-top lid. I never worry about
proofing my yeast, since it's never
here long enough to worry. It would
depend, too, on room temperature.

If you've never lost a spect of yeastt
to spoilage or plain old age, you're
obviously doing all the right things.

Please "have an iced tea, sit yourself
down and chat" with us all just as
often as you wish . . . and if you
have recipes or stories to share, well
just feel free to share them.
