First a BIG welcome to you Yanira Padin! wonder if that is an online name or real ... and how it is pronounced & it's origin ... but hen tht is me --curious!

Glad you have joined in here -- be sure to check out the other boards ... this place is adicting and enjoyable!

There was a gal over at the bread forunm who said that red star told her those dates on the large packages have more to do with profeeional baking than for home use -- they can be good way long beyond the date.

I keep mine in the frezzer--never a problem there. I have used 2 yrs beyond exp. date! I was glad to read the post about he dates because i figured i was using old and it worked :)

Proofing is a good idea if in doubt, I rproffed after I had moved and it was out of the frezzer a while.

Now maybe someone will come along with better more progfessional input but just thought i'd share ... my expirience with it :)
