I keep my yeast in the refrigerater. The yeast packages are dated and after the date I alway proof the yeast. You proof it by puting the yeast in 100 degree F. water with a pinch of sugar. If it foams in 15 minutes its fine to use. Add the yeast and water to watever you are makeing.
