I sure hope that the recipe is close to what you have been missing. I think the recipe makes wonderful chicken enchiladas but maybe my opinion is skewed-LOL:-> My daughter loves London!!! It is actually her second time living there. She spent her entire jr. year of college there and loved it so much that it is the only place she considered for graduate school. We miss her terribly but we can't seem to keep her close to home. I think the world has too many exciting places to visit and live so she follows her heart in that way. As her mother, I am happy for her but, like I said, we miss her and it is hard to let go:-( I am sure that one day you will get back to an El Chico and, then, you can go crazy eating their Mexican food:-)!!
