I'm glad if some of the recipes appealed to you. The Tomato, Mozzerella, Basil salad is delicious whether you use red wine vinegar, balsamic vinegar or no vinegar - just the extra virgin olive oil. We gotta get that DH of yours eating his veggies :-)!!! He doesn't know what he's missing.
