Recipe(tried): Fresh Tomato, Mozzarella, Basil Salad

This is very similar to Gina's Tomatoes Caprese Salad that Gladys posted. It is very simple and so fresh tasting. I have to admit that I sometimes forget about this salad but my family adores it. Mine does not call for balsamic vinegar or any vinegar for that matter - just a light sprinkling of the best extra virgin olive oil you can find and afford.

Fresh Tomato, Mozzarella, Basil Salad

Fresh tomatoes
2 (or however many you think you will need) balls of fresh Fresh mozzarella
Fresh Basil
Extra Virgin Olive Oil

Slice fresh tomatoes and fresh mozzarella. Arrange, alternately, on a plate, on a bed of nice lettuce (lettuce is optional). Chiffinade the basil leaves and sprinkle randomly over the tomatoes and mozzarella. Sprinkle lightly with olive oil.
