1-2-3-4-5 CINNAMON BREAD
12 ounces vanilla cream soda
1/2 cup molasses
3 cups self-rising flour
1 tablespoon ground cinnamon
1/4 cup brown sugar (for topping)
Preheat oven to 400 degrees F. Coat a loaf pan with nonstick cooking spray.
In a medium bowl, mix all the ingredients, except the brown sugar, until well blended. Pour the batter into a prepared loaf pan. Sprinkle with the brown sugar.
Bake for 50 minutes.
VARIATION:
Add 1 cup diced apples, 1/2 cup dates or 1/2 cup golden raisins to the batter.
Makes 1 loaf
