Recipe(tried): Pasta e Fagioli- vegetarian

Makes a hearty dish, is simple too.
In large saucepan heat 1 tbsp olive oil
Add 1 chopped onion and 2 cloves garlic
Saute three minutes


Add
one 28 oz can tomatoes
two 19 oz cans white kidney beans(drained and rinsed)
2 cups vegetable stock
1/4 cup slivered sub-dried tomatoes
1/2 tsp. each basil and oregano
1/4 tsp pepper
Bring all to boil, reduce heat, cover and simmer for 20 min. Stir in pasta return to boil, reduce heat cover and simmer until pasta is tender. Sprinkle with parmesan.

1/2 cup elbow macaroni
freshly grated parmesan
Makes six servings 250 calories,5 g. fat, 15 g. protein
