Recipe: Mona Phelp's Strawberry Icebox Pudding (using graham cracker crumbs)

2 cups graham cracker crumbs, divided use
1 1/2 cups powdered sugar
1 stick (1/2 cup) butter or margarine, softened
1 egg, beaten (pasteurized)
1 quart strawberries (crushed or chopped)
1/2 pint heavy whipping cream
1 teaspoon vanilla
Butter a 9x9x2-inch pan and place half of the crumbs on the bottom.
Cream sugar and butter well, add the egg and mix. Pour over crumbs. Add strawberries and cover with whipped cream flavored with vanilla. Sprinkle with remaining crumbs. Refrigerate for several hours or overnight.
