Couldn't find Cracker Barrel recipe. Hope this will do.
RECIPE(TRIED): BLACKBERRY COBBLER (FANTASTIC)
Board: Cooking Club at Recipelink.com
From: Julie Manassas VA 8-4-2005
FRUIT:
2 to 3 cups blackberries, cleaned and picked through*
1 cup sugar, divided use
1 tablespoon cornstarch
BATTER:
8 Tablespoons soft butter**
1/2 cup sugar
1 large egg
1/2 teaspoon vanilla
3/4 cup flour
1/4 teaspoon baking powder
FRUIT:
Place blackberries in 9-inch glass or ceramic deep dish pie pan (not metal).
Stir together: 1/2 cup sugar cornstarch. Sprinkle over and gently mix with the blackberries. Set aside. If you want sweeter berries, add more sugar.
BATTER:
Cream together butter and remaining 1/2 cup sugar (the batter is very sweet). Beat in egg and vanilla. Gently mix in flour and baking powder. (Note if you use unsalted butter, add a pinch of salt.)
Spread the batter over the fruit. It will flow during the cooking process so don't worry about covering every nook.
*OTHER FRUIT OPTIONS:
Pears with cinnamon.
Peaches with triple sec.
I added blueberries along with the blackberries last time. Very nice.
This will freeze perfectly. Make ahead for company. Enjoy!
