Recipe: Red Velvet Cake

RED VELVET CAKE

1/2 cup Crisco
2 whole eggs
1 1/2 cups sugar
2 ozs. red food coloring
2 Tablespoons cocoa
1/2 teaspoon salt
2 1/4 cups cake flour
1 cup buttermilk
1 teaspoon soda
1 tablespoon vinegar
1 tablespoon vanilla

Cream together Crisco, sugar and eggs. Mix cocoa and coloring in measuring cup. Mix to a paste and add to above ingredients. Add vanilla. Sift salt, soda and flour together. Add, alternating with buttermilk. Fold in vinegar. Bake in 2 layers (grease and flour pans)for 20-30 min. at 300 degrees

Icing:
1 1/2 teaspoons vanilla
1 1/2 cups granulated sugar
3 tablespoons cornstarch
1 1/2 cups cold water
3 sticks butter or margarine
Cream butter or margarine, vanilla and sugar until real fluffy. Cook water and cornstarch until thick, then COOL and add to creamy base and beat until like light whipped cream. (I split my 2 cake layers to make four before icing.) Spread between layers.

This is an old recipe from my mother-in-law. I got it over 25 years ago. I don't know how long she had had it. We enjoy. Hope you do.
