Recipe(tried): Killed Lettuce

Thought I'd pass this one on so every one else can try it. This is one I remember from my childhood (the first one).

KILLED LETTUCE
From: My Mother, Diane

Servings: 4

4 slices Bacon
6-8 each Green Onions (cut, small pieces)
1/2 cup vinegar
sprinkle salt
sprinkle pepper
1 tsp sugar (more or less to taste)
chopped onion (optional: good too!)
1-2 tsp water (optional: to cut vinegar)
1 head iceburg lettuce or your favorite

Tear and wash the tender (mostly green) leaves of the lettuce and drain well. Add the cut 6-8 green onions (a little chopped onion is optional and good as well). Sprinkle with salt and pepper (to taste of course), stirring gently so that all of the lettuce is well seasoned. Cut bacon into small pieces. Fry crisp and drain. Add vinegar (water is optional) to the bacon fat and let come to a boil.

Microwave or heat sugar, a little salt, pepper, and the vinegar/bacon to make the hot vinegar dressing (bring to a boil).

In a serving bowl, pour the hot vinegar dressing over the lettuce and toss gently. Take the crisp bacon (use more if you like) and sprinkle over the top of the "Killed Lettuce". Serve immediately!

Note: A Cissy Gregg wrote in 1962 that "Killed Lettuce", a variation of wilted lettuce is "another greenery we all love in this part of the country". She found this recipe in Myrtle Ellison Smith's "A Civil War Cook Book"; and that the recipe is from Tennessee, "but somehow or another it crept across the boarder into Kentucky".
