Recipe: Lemon Snowballs (cookies) - 1960's

Desserts - Cookies, Brownies, Bars
LEMON SNOWBALLS

1/2 cup soft shortening
2/3 cup sugar
2 tsp grated lemon rind
1 egg
3 tbsp strained lemon juice
1 tbsp water
1 3/4 cups sifted flour
1/4 tsp baking soda
1/4 tsp cream of tartar
1/2 tsp salt
1/2 cup nuts, finely chopped
Confectioner's sugar (for garnish)

Combine shortening, sugar, lemon rind and egg; mix together thoroughly. Stir in lemon juice and 1 tablespoon water; set aside.

Sift together flour, baking soda, cream of tartar and salt; stir into sugar mixture. Stir in nuts. Flour hands and form dough into small balls. Place about 1-inch apart on ungreased baking sheets.

Bake in a moderate oven (35 degrees F) for 10-15 minutes. (When done, cookies will be brown on the bottom but not on top.) Remove immediately from baking sheets and roll in confectioner's sugar.

Makes 3 or 4 dozen cookies
