As a long time fan of El Chico since the mid 70's,and mainly their relish recipe.... I finally got the relish recipe from the cook.
To make on a smaller scale, take a gallon container, then fill halfway with water.
Add:
2 jars jalapenos with juice (if you can get Hatch, they're the best)
1 tbsp. salt
1/4 cup white vinegar
2 bags frozen sliced carrots
1 medium onion, chopped
Stir well, and leave in frig for 24 to 48 hours to marinate. The longer you leave it the hotter it will get. ENJOY!
