I adapted this recipe from a recipe I found in a food magazine. It is GREAT on grilled salmon, or as a hamburger topping or just as a side dish. Lately we have been using fresh tomatoes from our garden.
*4 large ripe tomatoes chopped (Plum tomatoes are very flavorful but you can use any color).
*2 garlic cloves chopped fine.
*3 tbsp olive oil
*1 red thai chili diced (or a pinch hot pepper seasoning)
*1 tbsp grated ginger
*1/4 cup cider vineager
*3 tbsp Honey (we use a dark wild flower honey, you can use sweet clover also)
*Fresh Chopped basil
Mix everything but the basil in a pan and simmer until very thick. Chill for an hour and ad basil before serving. OR Serve hot over salmon or as a hamburger topping (very good). We have also served this over steamed vegetables.
Optional: remove seeds from tomatoes before using.
Using different tomatoe varietys and different honey varities will change the flavor. Everything we have tried has turned out to be excellent so far!
