Recipe(tried): Publix Calypso Cookies (copycat recipe)

I think I have finally cracked the code to the Publix Calypso Cookie Recipe. I think my recipe is actually even better! Try it!

PUBLIX CALYPSO COOKIES
(copycat recipe)

1/2 cup grated coconut
1/2 cup quick oatmeal, uncooked
1/2 cup coarsely chopped pecans
1/2 cup coarsely chopped dried pineapple (get good quality dried pineapple)
1 1/2 cups all purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup unsalted butter, melted
1 cup packed light brown sugar
1/2 cup white sugar
1 tablespoon vanilla extract
1 egg
1 egg yolk

Preheat oven to 325 degrees F. Grease cookie sheets or line with parchment paper.

Mix first four ingredients and set aside.

Sift together the flour, baking soda and salt, set aside.

In a medium bowl, cream together the melted butter, brown sugar and white sugar until well blended. Beat in the vanilla, egg, and egg yolk until light and creamy. Mix in the sifted flour until just blended. Stir in the coconut, pecan, oatmeal, and pineapple mixture. Let sit for 15 minutes covered with a damp paper towel.

Drop cookie dough 1 large teaspoon at a time onto the prepared cookie sheets. Cookies should be about 3 inches apart as they will spread.

Bake for 15 to 17 minutes (15 in my oven), or until the edges are lightly tasted. Do not overbake! Cool on baking sheets for a few minutes before transferring to wire racks to cool completely. Store in a sealed container to keep them soft.
