COOKIES WITH MINCEMEAT FILLING
2 1/2 cups sugar, divided use
1 cup shortening
3 eggs, well beaten
2 tbsp. milk
4 to 4 1/2 cups cake flour
4 tsp. baking powder
1/2 tsp. salt
MINCEMEAT FILLING:
1/2 cup mincemeat
1/3 cup water
1/2 cup sugar
TO MAKE THE COOKIE DOUGH:
Cream 2 cups sugar and shortening together. Add eggs and milk; set aside.
Sift flour, measure, and sift with baking powder and salt. Add to creamed shortening and sugar. Mix thoroughly. Chill 2 hours.
TO MAKE THE MINCEMEAT FILLING:
Cook mincemeat, the remaining 1/2 cup sugar, and water together 10 minutes. Cool.
WHEN READY TO BAKE:
Preheat oven to 425 degrees F.
Turn the cookie dough onto lightly floured board. Roll in sheet 1/8 inch thick. Cut into 72 rounds with floured cutter.
For each cookie, place 1 teaspoon filling between 2 rounds of dough. Press edges together to seal.
Bake in hot oven (425 degrees F) 10 minutes.
Makes 36 cookies
