ISO: Jays Marine Grill onion popovers and David Beards Catfish King coleslaw

i am looking for the vintage recipe for jays marine grill onion popovers, used to be in Dallas Texas. These were very light and airy and made with sauteed yellow onions, not powder, they almost tasted like they had a bit of yeast in them, extremely light. If anyone knows this recipe, thanks so much. And does anyone have the cole slaw recipe for David Beards catfish king??? thanks a lot
