SINFULLY FUDGY CHOCOLATE CAKE
FOR THE CAKE:
2 cups sugar
2 cups flour
2 sticks (1 cup) margarine
1/2 cup solid shortening
8 tbsp cocoa
1 cup water
2 eggs, slightly beaten
1/2 cup buttermilk
1 tsp baking soda
1 tsp cinnamon
2 tsp vanilla
1/2 tsp salt
FOR THE FROSTING:
6 tbsp milk
1 lb powdered sugar
1 cup pecan or walnut pieces
TO MAKE THE CAKE:
Preheat oven to 375 degrees F. Grease and flour a 16x11-inch baking pan.
Mix sugar and flour in large bowl; set aside.
In saucepan, bring to a boil 1/2 cup margarine, shortening, 4 tbsp cocoa and water. Boil and simmer.
When bubbling, pour over sugar and flour. Stir and add eggs. Add buttermilk and baking soda and mix. Add cinnamon, 1 tsp vanilla and salt. Pour into prepared pan.
Bake at 375 degrees F for 25 minutes. Five minutes before cake is done, make frosting.
TO MAKE THE FROSTING:
In a saucepan bring the remaining 1/2 cup margarine, the remaining 4 tbsp cocoa and milk to a boil. Remove from heat and stir in powdered sugar and the remaining 1 tsp vanilla. Add pecans.
Put frosting on cake immediately when it comes out of oven. Cut in diamond-shaped pieces, if you wish.
