Recipe: Rutherford's Grill Roasted Peanut Coleslaw (similar to Cherry Creek Grill)

Rutherford's Grill, Cherry Creek, Houston's, etc. are all part of the Hillstone Restaurant Group. So I am guessing that the food is similar also. I couldn't find Cherry Creek's but I did find a copycat recipe for Rutherford's. It sounded similar to what you described.

Rutherford Grill is a must stop for lunch every time my husband and I visit Napa. We were just there in July 2010, and had the coleslaw. I asked for the recipe - no luck but they did tell me the ingredients. I made this for a family BBQ a few weeks ago and my brother said this version was BETTER than Rutherford Grill! I was sort of experimenting so measurements are not exact. You can taste as you go and tweak it to your liking.

1 head white cabbage (slight green tint)
1 bunch cilantro - chop about 1 cup
1 cup chopped peanuts
1 bunch scallions - chop about 1 cup to the whites

DRESSING:
~ 3/4 cup peanut oil
~ 1/2 cup sugar,
~ 1/4 cup vinegar
Pinch cayenne
Tsp dry mustard
Black pepper
3 cloves garlic
Salt to Taste
