Recipe: Fruit Freezies with Variations

Desserts - Frozen
FRUIT FREEZIES

1 1/2 cups (12 ounces) canned or thawed frozen peach slices, drained
3/4 cup peach nectar
1 tablespoon sugar
1/4 to 1/2 teaspoon coconut extract (optional)

Place peaches, nectar, sugar and extract in food processor or blender container; process until smooth.

Spoon 2 tablespoons fruit mixture into each section of ice cube tray. Freeze until almost firm. Insert frill pick into each cube; freeze until firm.

VARIATIONS:

APRICOT FREEZIES:
Substitute canned apricot halves for peach slices and apricot nectar for peach nectar.

PEAR FREEZIES:
Substitute canned pear slices for peach slices, pear nectar for peach nectar and almond extract for coconut extract.

PINEAPPLE FREEZIES:
Substitute crushed pineapple for peach slices and unsweetened pineapple juice for peach nectar.

MANGO FREEZIES:
Omit coconut extract. Substitute chopped fresh mango for canned peach slices and mango nectar for peach nectar.

TIP:
You can also pour 1/3 cup fruit mixture into each of 8 plastic pop molds or small paper or plastic cups. Freeze until almost firm. Insert wooden stick into each mold; freeze until firm. Makes 8 servings.
