Krispy Karneval Doughnuts
My dear German mother made these crispy delecasies called 'Rosettes'.
A special iron with assorted shapes is needed.
They can be found in Cooking speciality shops or on the internet. They come with a single or two pronged handle.
2 eggs, slightly beaten
1 tablespoon granulated sugar
1/4 teaspoon salt
1 cup all purpose flour, sifted
1 cup milk
1 teaspoon vanilla
Vegetable oil
Combine eggs, sugar and salt. Beat well. Add remaining ingredients, beat until smooth.
In a 3 quart heavy sauce pan heat 1-1/2 inches of oil to 350 degrees F. Heat rosette iron in the hot oil draining off excess. Dip hot iron into the batter to within 1/4 inch of top. Batter should sizzle. Fry 10 - 30 seconds until golden. Lift out, tip upside down to drain. With a fork push rosette off iron onto a rack that is placed over paper towels.
Reheat iron 1 minute. Stir batter occasionaly. Continue in this manner until batter is used up.
Sprinkle with powdered or granulated sugar. You can make a powdered sugar glaze to drizzle over the rosettes.
Makes approximately 3 1/2 dozen. Recipe can be doubled. Enjoy, Alice
