Recipe: Easy Red Beans and Rice

Main Dishes - Rice, Grains, Pasta
EASY RED BEANS AND RICE

1 pound smoked link sausage, sliced 1/2-inch thick
1 medium onion, chopped
1 medium green bell pepper, chopped
1 clove garlic, minced
1 (16 ounce) can tomatoes, chopped (reserve juice)
2 cans (16 oz each) kidney beans, drained
1/2 teaspoon oregano
1/2 teaspoon ground black pepper
Hot cooked rice (for serving)
Tabasco sauce (optional, for serving)

Cook sausage in saucepan over low heat 5-8 minutes.

Add onion, green pepper and garlic; saute until tender.

Add tomatoes with juice, beans and seasonings; simmer uncovered 20 minutes.

Serve over rice. Season with Tabasco if desired.
