Recipe(tried): Sunday's Beef Pie (using mashed potatoes and ground beef, Times-Picayune, 1970's)

Main Dishes - Beef and Other Meats
SUNDAY'S BEEF PIE

FOR THE MASHED POTATOES:
5 medium potatoes
1/4 cup butter (1/2 stick)
1/4 cup cream
1/4 cup milk
Salt and pepper, to taste
FOR THE FILLING:
2 lbs ground beef round
1 tablespoon bacon drippings
2 medium onions
1 parsley sprig
1/4 cup chopped shallots
3 garlic cloves, minced
1 small can mushrooms, chopped
2 teaspoons Worcestershire sauce
2 tablespoons roux
1 cup boiling water
FOR THE PIE:
1 (9-inch, unbaked) pie shell
1 cup grated sharp cheddar cheese

TO PREPARE THE MASHED POTATOES:
Boil, drain and mash potatoes. Add butter, cream, milk, salt and pepper. Set aside.

TO PREPARE THE FILLING:
In skillet, brown ground beef in bacon drippings. Add remaining ingredients for the filing and cook for 15 minutes or until mixture thickens.

TO ASSEMBLE AND BAKE:
Line pie crust with potatoes. Put in meat mixture and place more potatoes on top. Sprinkle with cheese.

Bake about 20 minutes at 400 degrees F.

Makes 6 servings
