Recipe: Fruited Spinach Salad with Raspberry Vinaigrette (using strawberries, mango and pecans)

FRUITED SPINACH SALAD

"Sweet salad balanced with savory dressing."

FOR THE SALAD:
10 ounces fresh spinach, cleaned and torn into bite sized pieces
1/2 cup pecans, toasted (2 ounces)
2 cups sliced fresh strawberries
2 mangoes, peeled and chopped
1/2 cup sliced red onion (2 ounces)
FOR THE DRESSING:
1/2 cup sugar
1 cup oil, vegetable
1/3 cup raspberry vinegar
2 tablespoons salad seasoning with cheese

Combine spinach, pecans, strawberries, mango and red onion.

Whisk sugar, oil, vinegar and seasoning together.

Drizzle dressing over salad greens. Serve immediately.

Makes 8 servings
