Recipe: Hot German Potato Salad (with chopped apple, baked)

HOT GERMAN POTATO SALAD

3 cups cooked cubed potatoes
1 1/2 cups coarsely chopped apples
1 slices bacon
1/2 cup chopped onion
1/2 cup chopped celery
1 1/2 tablespoons flour
3/4 cup apple juice (or water)
1/3 cup vinegar
1/3 cup sugar

Preheat oven to 350 degrees F. Grease a 1 1/2-quart casserole.

In skillet, cook bacon. Remove and drain.

Pour all but 3 tablespoons bacon fat from the skillet, add onion and celery and stir fry 1-2 minutes.

Blend in flour. Add juice (or water) and vinegar. Cook and stir until mixture thickens. Add sugar.

Place potatoes, apples, and crumbled bacon in prepared casserole. Add skillet mixture, mixing lightly.

Cover casseroled and bake 30 minutes.

Makes 6 servings
