Recipe(tried): Simple But Delicious Friday Meal....

Good Morning to All!!

Tonight's meal will be simple enough, a Vegetable Fritatta, a Spinach & Pear salad and a yummy lemon cake to go with coffee. Can't get any simpler than that.

I was inspired by watching Martha Stewart's segment today on fritatta and remembered I had a fabulous recipe from Micahel and Jane Stern's book, Real American Food. I enjoy this book so much because you "travel" with them across the U.S. and encounter delicious mouth-watering regional favorites.

I must admit though the Stern's fritatta is much more superior to hers!! I have enjoyed making it for many years and it is a welcome addition to a brunch as well as a simple dinner. It is made in the oven in a springform pan and it looks every bit the gourmet star it is%
