ISO: Golden Corral sweet potato sticks

When I was a teen we used to go to the Golden Corral for lunch and my favorite on the buffet line was the sweet potato sticks. They were a fried stick filled with sweetened sweet potato and coated in a breading. Much like a mozzerella stick. Years ago the restaurant closed and is no longer in my area. I would love to be able to get the basics of this recipe to make at home. thank you
