Recipe: 10 Minute Cheese Sauce

10-MINUTE CHEESE SAUCE

"Here's a simple way to transform ordinary food into something special. This cheese topping is excellent over pasta, steamed vegetables, or grilled fish."

1 tablespoon butter
1 tablespoon flour
1 cup low-fat or whole milk or chicken broth
1/2 cup grated hard cheese (such as cheddar, parmesan or jack)
Salt and freshly ground black pepper
Dash ground nutmeg (optional, to taste)

Melt butter in a medium saucepan over moderate heat. Add flour; mix to create a paste. Cook 1 minute.

Slowly add milk or chicken broth, whisking to create a smooth sauce. Stir in cheese. Let cook 5 minutes, or until the sauce is thick enough to coat the back of a spoon. Season with salt, pepper, and nutmeg to taste.
