Peel and thinly slice 1 lb. fresh gingerroot. Place in saucepan add water to cover and cook gently until tender, about 30 min. Drain Weigh and place in saucepan with an equal amount of sugar and 3 tbsp water. Bring to boil, stirring often. until ginger is transparent and the liquid is almost evaporated. Reduce heat and cook stirring constantly until almost dry. Toss in sugar to coat. store in airtight container

4 cans chicken stock
3 ribs of celery, chopped
2 onions, chopped
1 bag of fine egg noodles
3 carrots, scraped and sliced
poultry seasoning, seasoned salt, and pepper
2-3 cups of chopped turkey
2 T. olive oil (optional)
Saute vegetables in olive oil. Put the vegetables in a stockpot. Add the chicken stock. Let the stock simmer for 20-25 minutes. Heat the stock to boiling and add the noodles. Add more water if the stock/vegetable mixture is too thick. Right before the noodles are done, add the chopped turkey. Makes a large pot of soup. Leftovers can be frozen.

2 large onions, chopped
1 bell pepper, chopped
3 T. butter
1 lb. ground beef
2 cups canned tomatoes
1 cup uncooked rice
2 tsps. Worcestershire sauce
1 tsp. salt
Cheddar cheese, optional
Cook onion and pepper in butter until onion is transparent. Add beef and cook until browned. Drain the beef mixture. Stir in rest of ingredients and pour into greased 2-quart casserole. Cover and bake about 1 hour at 350. Remove the cover the last 15 minutes of cooking time. May be topped with cheese.

1 T. vegetable oil
2 lbs. flank steak, cubed
1 pkg. dry onion soup mix
3 1/2 cups boiling water
4 potatoes, washed, peeled, and cubed
Preheat oven to 300. Heat oil in a large heavy skillet. Add flank steak and cook until meat is browned on all sides. Drain and place meat in a 3-qt. casserole. Set aside. combine soup and boiling water. Mix until blended. Pour evenly over meat. Cover and bake for 1 hour. Add potatoes and mix well. Cover and cook for 45 minutes.

6 pork chops
1 cup chopped onions
1/2 cup bell pepper
1 pkg. dry onion soup mix
1 1/4 cup water
2 T. sherry
2 T. olive oil
Brown chops in olive oil, drain. Put onion and bell pepper in the same pan and cook until onion is transparent. Stir in soup mix, water, and sherry. Return chops to pan and simmer, covered, stirring frequently. Cook for 45 minutes or until chops are tender.
Debbie.D.,.AL (08:50:56) : SAND TARTS--There are two kinds of cookies that have to be made at our house for Christmas--sand tarts and peanut butter blossoms. This recipe is quick and easy, but delicious.
1 cup butter
1/2 cup powdered sugar
2 cups sifted flour
2 tsps. vanilla extract
1 1/2 cups nuts
Cream butter and sugar. Gradually add flour into creamed mixture. Stir in vanilla extract and nuts. Form into small balls. Cook on ungreased cookie sheet at 350 for 20 minutes. Cool slightly and roll in powdered sugar.

DIVINITY FUDGE
1 1/2 c White sugar
1 c Brown sugar
1/2 c Corn syrup
3/4 c Water
1 pn Of salt
1 Egg white
1 t Of vanilla and almond-flavouring
Cook together until dissolved then uncover and cook to
hard ball stage (265F.). Add salt and let stand while
you beat 1 egg white. Add vanilla and almond
flavouring if desired. Beat until candy stands in
peaks. Drop by teaspoon on waxed paper.

1/3 cup margarine or butter
1 cup sugar
2 eggs
3 bananas, really ripe and mashed
4 T. buttermilk
1 tsp. vanilla extract
1 1/2 cups sifted all-purpose flour
3/4 tsp. baking powder
1/2 tsp. salt
Cream the butter and the sugar together. Add the rest of the ingredients to the sugar mixture. Fill muffin tins 2/3 full and bake the muffins at 325 for 15-20 minutes.

3 egg whites
1 1/2 cups sugar
1 tsp. vanilla
23 saltine crackers (crushed fine)
1 cup chopped nuts
Beat egg whites until foamy. Gradually add sugar and vanilla extract. Fold in crackers and nuts. Pour into a 9" buttered pie plate. Bake 30 minutes at 350. Cool completely. Top with 1 cup of Cool Whip and 2/3 cup of coconut.

(This is a cross between a pie and a cake.
2 cups chopped cranberries
1 cup chopped pecans
1-1/2 cups sugar, divided
2 large eggs
1/2 cup butter, melted and cooled
1 cup flour
1/4 teaspoon salt
2 teaspoons vanilla extract
PREHEAT OVEN to 350 F. In a greased 10-inch pie plate, combine the
cranberries, pecans, and 1/2 cup of the sugar. Stir gently to mix well. In a
mixing bowl, combine the eggs, melted butter, remaining 1 cup sugar, flour,
salt, and vanilla. Stir the batter until it is smooth and all the flour is mixed in.
Pour the batter over the cranberry mixture and stir gently with a spoon to
partly incorporate the top and bottom layers; they don't need to be
completely blended. Bake for about 40 minutes, or until done. Serves 8 to 10.

Cranberry Pie
1 1/2 cups Cranberries (1/2 package)
1 Unbaked pie shell, thawed
1/4 cup Dark brown sugar
cup Chopped walnuts
1 Egg
cup White sugar
cup Flour
1/3 cup Melted butter
Preparation Instructions
Spread cranberries on bottom of pie shell. Sprinkle brown sugar over them and then sprinkle the
nuts on top of the sugar.
In a bowl, beat egg until thick. Add sugar, flour, and butter, and beat well. Pour over pie.
Bake at 325 degrees Fahrenheit for 45 minutes.

Cranberry Pie
NEVER FAIL PIE CRUST
1 lb. pareve margarine or vegetable shortening
4 1/2 cups flour
4 tbs. sugar
1 1/2 tsp. salt
1 tsp. baking powder
1 egg
2 tbs. vinegar
Cold water
With a pastry cutter (it does a better job than the mixer or a food processor) cut flour sugar baking
powder and salt into the margarine.. Keep cutting until you have little balls the size of peanuts.
Break the egg into a separate dish. Check for blood spots. If the egg is clean pour teh egg into a
glass measuring cup. Beat the egg in the cup until foamy. Use a fork--a little fork.
Add the vinegar. Stir. Add enough water to make one cup of liquid. Stir.
Pour the liquid into the flour mixture. Blend until you have a soft ball of dough.
Roll our the dough on a lightly floured pastry board.
This makes 4 or 5 pie crusts.
Line a 9 inch pie plate with the pastry dough.
Cranberry Pie Filling
1 1/2 cups raisins
3/4 cup water
1 1/2 cups sugar
1/4 cup flour
1 pkg. cranberries (about 4 cups)
1 tsp. cinnamon
1/2 tsp. allspice
1/4 tsp. cloves
Line a 9 inch pie plate with the pie dough you just made.
On a pot on the top of the stove bring the raisins and the water to a boil Gradually add the sugar
stirring constantly until it dissolves. REDUCE HEAT. Gradually add the flour and stir until the flour
dissolves. I use a portable electric hand mixer to do this. Cook and stir until the mixture thickens.
Add the cranberries.. Cook until the cranberries skins platz (burst) open. Let the mixture cool down
ever so SLIGHTLY. Add the spices and mix so that the spices are evenly distributed.
Pour into the lined pie dish.
Cover with a second pie crust. Cut slits in the top of the pie for steam to escape, otherwise you will
have spillage of the filling in the oven and get an F in Auntie Rivka's cleanup class.
Take a egg.. Break it open. Add a tablespoon or so of water to it. Add a teaspoon of sugar. Beat
the mixture until foamy. Brush over the top of the pie crust.
Preheat oven to 450F
Put the pie in the oven at this temperature for 10minutes. This seals in the juices.
Reduce the heat to 350F and bake until the pie crust is golden brown--about 30 minutes.
Cool and cut before serving!
KellyWA (03:35:13) : PRIME RIB ROAST
4-5 pound Prime Rib Roast
1/3 cup olive oil
2 tablespoons lemon juice
3 tablespoons rosemary leaves
4 garlic cloves, minced
1 teaspoon black pepper
Place the roast in a shallow roasting pan and allow it to "rest" out of the refrigerator for 30 minutes.
Preheat oven to 450 degrees F. Combine the remaining ingredients. Rub the meat surface with olive
oil mixture. Place the roast in a preheated oven for 15 minutes or until the roast begins to brown.
This will sear the roast and seal the juices. Reduce the heat to 350 degrees F and continue cooking
for 15-18 minutes per pound for a boneless roast or 26-32 minutes per pound for a bone-in roast.
A meat thermometer is desirable to test the degree of doneness. Remove the roast when the
thermometer reads 5 degrees below the desired doneness.
Remove from the oven and allow meat to rest for 10 minutes before carving.
Makes: approximately 8-12 six-ounce cooked portions
Prepartion Time: 40 minutes
KellyWA (03:32:15) : Holiday Prime Rib Roast
9-10 lb. prime rib roast (4-bone)
2 tbsp. minced fresh garlic
2 tbsp. crushed black pepper
1/2 cup course salt (sea salt or Kosher)
1/2 cup fresh chopped rosemary
Preheat oven to 350 . Mix above
ingredients and coat top of prime rib
evenly (under fat cap). Place beef roast
(fat side up) on a rack in an open
roasting roasting pan to catch juices.
Roast in oven until meat thermometer
reads five degrees below desired
doneness; (135 for rare, 140 for
medium rare, 155 for medium). Allow
roast to stand for 15 to 20 minutes before
slicing. During standing time, the
temperature will continue to rise and
reach the desired doneness. Slice to desired thickness and serve with au jus and
horseradish.
KellyWA (03:29:13) : Prime Rib
One 7-10 pound prime rib roast
sliced garlic
salt
ground black pepper
Dijon mustard
Insert slivers of sliced garlic throughout the roast.
Cover with salt, pepper, and mustard. Be generous with mustard.
Put on rack in roasting pan, covered. Cook at 500 degrees F (260 degrees C) for 60-90 min. Turn off oven. Leave oven closed, do not peek for 90 minutes
to 2 hours, then check temperature with meat thermometer for desired doneness.
MED/TN (02:41:31) : DATE LOAF CAKE
1 package dates
1 cup boiling water
1 teaspoon soda
1 1/2 cups pecans
1/2 cup shortening
1 cup sugar
2 eggs
1 teaspoon vanilla
Pinch salt
2 cups flour
Cut up dates, add soda to boiling water and pour over dates. Cool. Cream shortening, sugar, salt eggs and vanilla. Roll pecans in flour. Mix dates and shortening, then add flour, 1/2 cup at a time, until all flour has been added. Add nuts and fold into mixutre. Pour into a greased and floured loaf pan. Bake at 350 for 45 mins.
MED/TN (02:33:37) : DATE-NUT CAKE
1 cup butter
2 cups sugar
7 eggs, separated
3 1/2 cups flour
3 teaspoons baking powder
1 cup whiskey or brandy
4 packages dates, cut up
1 qt. shelled pecans, broken
Cream butter an sugar. Add egg yolks, one at a time. Sift flour an baking powder togeter and add. Stir in whiskey. Beat egg whites until stiff and fold in gently. Add chopped dates and nuts carefully. Use a greased loaf pan or tube pan lined with waxed paper. Bake at 300 for 1-1 1/2 hrs.

Sage Stuffing

Serving Size : 10
1 cup finely chopped celery
1 medium onion -- chopped
1/2 cup butter or margarine
1 teaspoon ground sage
1/2 teaspoon salt
1/8 teaspoon pepper
8 cups dry bread cubes
3/4 cup chicken broth
In a saucepan cook celery and onion in butter or margarine till tender but not brown. Remove from heat; stir in sage, salt, and pepper. Place the dry bread cubes in a large mixing bowl. Add the celery mixture. drizzle with enough broth to moisten, tossing lightly. Use to stuff one 10 pound turkey.
CHESTNUT STUFFING: Prepare sage stuffing as directed, except add 1 pound fresh chestnuts, roasted and coarsely chopped, with the seasonings.
TO ROAST CHESTNUTS: use a sharp knife to slash an x into each chestnut. Place on a baking sheet; bake at 400 degrees for 15 minutes. Cool and peel.
NOTES : I use 8 cups of toasted bread cut into cubes. I usually make the chestnut recipe! Really good!

Creamed Onions

Serving Size : 6
1 pound pearl onions
3 tablespoons butter
3 tablespoons flour
1 dash nutmeg
1 1/2 cups light cream
2 tablespoons snipped parsley
In a covered saucepan cook onions in boiling salted water for 8 to 10 minutes or till tender. Drain well and set aside. In a saucepan melt butter; stir in flour, nutmeg, 1/2 teaspoon salt and a dash pepper. Add cream or milk all at once. cook and stir till thickened and bubbly. Cook and stir 1 minute more. Stir in onions and parsley; heat through.

Candied Sweet Potatoes

Serving Size : 6
8 medium sweet potatoes
1/3 cup packed brown sugar
1/4 cup butter
1/2 teaspoon salt
3/4 cup miniature marshmallows
Scrub potatoes; cut off woody portions and ends. Cook, covered, in enought boiling salted water to cover for 30-35 minutes or just till tender. Drain, peel, and cut int slices 1/2 inch thick.
In a 1 1/2 quart caserole layer halve each fo the potatoes, brown sugar, butter, and salt. Repeat layering. Bake, uncovered, in a 375degree oven for 30 to 40 minutes or till glazed. Sprinkle marshmallows atop. Bake about 5 minutes more or till light brown.

from Nelson Family Camping
1 pound ground beef
chopped onion
chopped green pepper
4 eggs
seasonings of choice
1 package refrigerated buttermilk biscuit, or any prepared biscuit, muffin or corn
bread batter
vegetables, cut in pieces
whole onions, for cooking in
whole oranges, for cooking in
Yield: 4 Servings. Use orange shells or onion shells as your "cooking pots".
1.Prepare your "Cooking Pots":
Oranges: Cut the oranges in half, slicing through the navel and stem ends.
Remove the orange sections (and eat or save for the meal).
Onions: Cut the onions in half, slicing through the middle of the onion. Remove
the inner section, leaving the outer 2-3 rings (chop the removed onion to add to
the meat mixture).
2.Mini meat loaves: Mix ground beef, seasonings, chopped onion and green pepper.
Divide into 4 equal portions. Put the meat mixture into the orange shell or onion section
and place directly on coals. Cook about 15 minutes.
3.Eggs: Crack an egg into each of 4 the orange shells or onion sections and place on
coals. Cook 10-12 minutes.
4.Biscuits: Place a refrigerated biscuit (or biscuit dough from scratch) into orange shells
or onion sections. Place on coals and bake about 15 minutes. Note: You can prepare
your favorite muffin mix or corn bread mix and cook in orange shells, too.
5.Vegetables: Place vegetable pieces in orange shells or onion sections. Add a small
amount of water and place on coals. Cooking times will vary with type of vegetable.

BANANA-PECAN BREAD
1 1/2 cups All Purpose Flour
1/2 cup Sugar
1 tsp. Baking Powder
1/2 tsp. Baking Soda
1/2 tsp. Salt
1/3 cup Vegetable Oil
2 Extra Large Eggs, beaten lightly
1/4 cup Dairy Sour Cream
1 tsp. Vanilla Extract
When beep sounds, Add:
1/2 cup Over-ripe, Mashed Banana
1/3 cup Chopped Pecans
Method
1. Measure all ingredients into baking pan.
2. Insert baking pan securely into baking unit and close lid.
3. Select CAKE course. (If arrow is flashing, this is the JAM course, not the CAKE course).
4. Push START.
5. When beep sounds after about 5 minutes, add banana and pecans and scrape side and bottom of pan with a rubber spatula to help mix.
6. Push START again.
7. The machine will beep and the COMPLETE light will illuminate when the bread is finished. (The COMPLETE light flashes during the cooling cycle. The loaf can be removed at this time.)
8. Using hot pads, remove pan from unit and pull out kneading rod.
9. Remove bread from baking pan and allow to cool before slicing.
Makes 1 loaf approx. 3 3/4 inches
