Breakfast and Brunch

Health foods became more popular for mainstream America in the 1970s. One of the most widely embraced health food was granola. Recipes abounded, and most cereal companies offered a boxed version. Most store-bought granolas of the era were heavy in fat and sugar.

BASIC GRANOLA

1/3 cup vegetable oil
1/3 cup honey
4 cups old-fashioned rolled oats
1/4 cup wheat germ
cup sliced almonds
3/4 cup seedless raisins

[This recipe can be adapted to personal taste, adding or substituting dried fruits, seeds or nuts.]

Heat oven to 300. Line a 15x11x1-inch jellyroll pan with foil. Set aside.

Blend oil and honey in a large bowl. Add oats, wheat germ and almonds and mix well to coat.

Spread mixture evenly in pan and bake, uncovered, stirring occasionally, until golden brown, about 25 minutes. Remove from oven, stir in raisins and cool to room temperature. Store in an airtight container at room temperature for up to 2 weeks. Makes about 4 1/2 cups.
