Recipe: 1970s Food - Real men DID eat quiche!

Real men (and nearly everyone else in the country) ate quiche in the '70s. It was not until the end of the decade that the dish lost some popularity. Below is a "basic" quiche recipe. Most of us, however, added and added and added other ingredients.

CLASSIC QUICHE

6 slices bacon, cooked and crumbled
1 unbaked 9-inch pie shell
2 cups (8 ounces) shredded Swiss cheese
3 eggs, slightly beaten
1 1/2 cups half-and-half
1/2 teaspoon salt
1/8 teaspoon pepper
1 tablespoon butter

Place bacon in pie shell, then sprinkle in cheese. In bowl, beat together eggs, half-and-half, salt and pepper. Pour over the cheese. Break cold butter into small pieces over top.
Bake in 375 oven 35-40 minutes or until a knife inserted near the center comes out clean. Allow to stand 10 minutes before serving. Makes 6 servings.
