Recipe: A NOTE on the subject of brown sugar for Sophia

Puerto Rico was one of the biggest sugar & rum producers during the 20th century. The sugar producing plant establishments were called CENTRALES DE AZUCAR (or sugar cane refineries) & it is quite a difficult process. Brown sugar is the product of unrefined sugar cane molassess. Brown sugar is refined to produce white sugar.

Here is a note from the Sugar Assocciation in the United States:

How does brown sugar differ from white sugar?
Brown sugar is sugar crystals in a specially prepared molasses syrup with controlled natural flavor and color components. A number of sugar refiners make brown sugar by preparing and boiling a special syrup containing these components until brown sugar crystals form. Others produce brown sugar by blending a special flavored syrup with white sugar crystals.

Therefore, from the above note I think Di/Maryland was not exactly wrong.
