Recipe(tried): A Summer Dinner - Green Bean Salad, Sauteed Yellow Squash with Onions
Menus We finally have some LOCAL summer produce available to us, and it inspired me to make a very basic meal and enjoy the fresh veggies I've been waiting for since last fall. Definitely nothing fancy, but it seems a shame to do a lot to these long-awaited gems -- during the beginning of the season, simplicity wins out for me (in a few weeks, it will feel "ok" to do more to them!).
With my pork chops (just grilled with a Montreal steak seasoning), I fixed:
Green bean salad
Silver queen corn on the cob (just boiled for 4 mins. and buttered)
Yellow squash and onions
Sliced tomatoes
The green bean salad is basically this:
Lightly cooked green beans, drained and cooled
Red bell pepper, cut in slim julienne
Some crumbled crispy bacon
Some crumbled blue cheese (if you hate blue, try some small dice of smoked gouda or just omit cheese)
Dressed with a vinaigrette - about 3 parts oil, one part sherry vinegar (my latest favorite ingredient!), a little crushed garlic, lots of salt and pepper and fresh Italian parsley (if you omit the cheese, add some fresh mint, too).
Saut ed Yellow Squash with Onions:
Simple again, because the squash from the farm stand was so fresh that it still had that "squeak" to the touch (you know what I mean?!). I saut ed some sliced Vidalia onion in a little bit of butter mixed with oil until they were just turning soft (I think that browning them overpowers the squash in this case). Added the sliced squash with salt and pepper and saut ed until the squash was slightly softened.
