Good Morning. Gay, I hope you will have help doing this because it is a lot of work. I wish I could lend a hand as this is my specialty. For the potato salad figuring waste as well you will need & assume not everyone eats potato salad 6.25 oz of potatoes per person. That means 78 pounds. Since they can be bought in 10 pound bags you need 8 bags. I would like to mention to you that the red rose (New Potatoes as they are called) is optimum for potato salad. However if you can buy the white rose on sale they to make an xlnt salad. I buy witchever is on sale. As for the ham you can safely assume 6 sandwiches per pound, so you will needat least 35 pounds but I would go for 40 pounds. Go for the canned ham variety because it is fully cooked Just do a "VIRGINIA HAM" effect on them for flavoring. Place in the oven till it reaches 145 degrees to melt the sugar. To be economical buy the 10 pound cans. Either borrow or rent a meat slicer to slice the ham. If I may suggest to you my friend as I would like you to be succeesful in this endeaver buy Mozzie cheese (The kind used on pizza) & slice that up to go with the ham sandwiches. Do not forget about 10 heads of lettuce & 35 to 40 medium tomatoes, Mustard & mayo & oh yes pickle spears as well.

Gay, let me mention to you that the potato salad gets better ever day up till the 3rd day, so you can begin making it 3 to 5 days before hand. I thought this information may help you in "Time Prep". (I love making potato salad) Good Luck & have a nice day.
