Recipe: Angel-Hair Pasta Supreme (with tomatoes, chicken, bacon, and Asiago cheese)

8 ounces angel-hair pasta, uncooked
2 teaspoons olive oil
1 medium sweet onion (such as Vidalia), chopped
3 cloves garlic, minced
1/4 cup water
1 (10-ounce) package fresh spinach leaves, chopped
2 cups chopped plum tomatoes
2 cups chopped cooked chicken breast
2 slices cooked bacon, crumbled
3 tablespoons balsamic vinegar
1/4 cup Asiago cheese (for serving)
Cook pasta according to package directions; drain and set aside.
Meanwhile, heat oil in a large nonstick skillet on medium-high heat. Add onion; cook 2 minutes.
Add garlic; cook 1 minute.
Add water and spinach; cover and cook 2 minutes or until spinach wilts.
Stir in tomatoes, chicken, bacon and vinegar; cook 2 minutes or until heated through. Spoon over pasta; sprinkle with cheese.
Servings: 6
