Recipe: Fool Medemmas (Fava Bean Spread)
Appetizers and SnacksFOOL MEDEMMAS (FAVA BEANS SPREAD)
1 (16 ounce) can cooked fava beans
1 large onion, chopped
1 large tomato, diced
1/4 cup chopped fresh parsley
juice of 2 lemons
1 1/2 tablespoons olive oil
1 teaspoon cumin powder
salt, pepper, and red chili pepper (to taste)
TO SERVE:
additional olive oil
Pita bread (optional)
Pour the beans into a pot and bring to a boil.
Add remaining ingredients. Bring to a boil again, then reduce to medium heat and cook for about 5 minutes.
Drain and process the solids or mash in a mortar.
Mound over a plate and drizzle with good olive oil. This dish is usually eaten with warm pita bread.
Serves: 4
