Recipe(tried): Another dinner at our house... Cilantro-Jalapeno Pork Tenderloin, Corni Rice A Roni
Menus These were definately "keeper" recipes at our house. The pork was so tender you could cut it with a fork. The rice dish I sort of made up as I went. A friend is in search of something like it so I was experimenting. It turned out pretty tasty, if I have to say so myself!
Cilantro-Jalapeno Pork Tenderloin

Servings : 8
2 pounds pork tenderloin
1 bunch fresh cilantro -- washed,stems removed
6 cloves garlic -- chopped
1 (10oz) jar jalapeno jelly
1 (6oz) can frozen limade concentrate -- thawed
Process the cilantro, garlic, jelly and limeade in a blender or food processor until pureed. Set aside 1/2 cup for dipping. Pour the remainder of the sauce over the pork in a kip-top plastic bag. Marinate in the refrigerator for several hours or overnight, turning occasionally. Place tenderloin on the rack of a grill pan or roasting pan (lined with foil, for easy clean up).
Reserve marinade. Bake at 300 degrees for about 1-1/2 hours, basting with reserved marinade, or until internal temp. reaches 170 degrees.

Corni Rice A Roni

Servings: 12
1/2 medium onion -- chopped
2 cloves garlic -- minced
1 tablespoon olive oil
1 (5.9oz) box chicken flavored Rice A Roni
4 ounces reduced fat cream cheese
1/2 cup reduced fat sour cream
4 ounces shredded Monterey jack cheese
4 ounces shredded Cheddar cheese
1 (8.5oz)can cream style corn
1 (11oz) can corn kernels -- drained
1 (4oz) can chopped green chilies
salt and fresh ground pepper -- to taste
cayenne pepper -- to taste
Brown Rice A Roni according to pkg. directions, adding onion and garlic. Proceed as pkg. directs, but cover and simmer only about 8 min. In a large bowl, mix hot Rice A Roni with the remaining ingred. Pour into a 2-1/2 qt.
baking dish sprayed with cooking spray. Cover and bake at 350 degrees for 30 min. or until hot and bubbly and rice is tender. Cool slightly before serving.
