Pina Colada Pie

COLADA CREAM PIE:

9" pie crust
3/4 c coconut-pineapple juice, frozen or canned
4 ripe bannanas, sliced
8 Tbsp unsalted butter, softened
16 oz cream cheese, softened
2 c sifted powdered sugar
1/4 c sour cream
2 Tbsp pure vanilla extract
1 c shredded sweetened coconut, lightly toasted

Garnish:
1/2 c chopped pecans, lightly toasted
2 oz semisweet choc. melted

In a small, shallow bowl, combine the juice and bananas for 5 mins. Drain well,
reserving the juice.
Put the buter and cream cheese in a bowl and beat until smooth. Scrape down the
bowl. Add the sour cream, vanilla, and half of the reserved pineapple juice,
and beat until combined. Cover the bowl with plastic wrap and chill until it is
time to assemble the pie.

Spread half of the cream cheese filling over the bottom of the prebaked shell
and top with half of the bananas, arranging them in a single layer. Sprinkle
the coconut over the bananas, then top the coconut with the remaining bananas.
Spread the remaining cream cheese filling evenly and smoothly over the top of
the pie.
Arrange the pecans over the cream cheese filling. Drizzle the melted chocolate
over the top of the pie in a decorative pattern. Let the chocolate set before
