Dear Rhonda,

Sorry for the missunderstanding in the Pritikin Corn Bread recipe. I copied if directly form the book except for the egg replacer part. I felt if other KitchenLink viewers wanter to use egg white or egg replacer they could have a choice.

Please DO NOT USE BOTH EGG WHITES AND EGG REPLACER AT THE SAME TIME. The Corn Bread would be hard and dry like a rock sitting the desert sun (yuk!).

The part of the recipe ingredients list was:
3 egg whites/egg replacer

This meant use 3 egg whites OR use the equivalent amount of egg replacer for 3 egg whites.

I use the back slash, (/) in place for the word OR in my recipes.

If this is not the correct way to write a recipe please let me know so I do not confuse anymore KitchenLine viewers.

Only beat the egg whites if using them.

When I am cooking on pan of Corn Bread my egg replacer is the last wet ingredient I add to the dry ingredients. I usually mix the soy flour and water together in a small cup before adding them to the other wet ingredients.

No need to beat the soy flour egg replacer.

The Energe Egg-Replacer is a commerical mix?

If your answer is yes, then on the back of the box there should be instructiions as to what the manufacters equivalent of one egg is. Just follow their instructions. (Just remember this recipe calls for the equivalent 1 1/2 eggs).

The reason I use soy flour egg replacer is it is cheaper and contains more protien than the commerical egg replacer. The only limitations to soy flour egg replacer is it can only be use in place of eggs in baking, i.e. breads, cookies, cakes, etc. The commerical egg replacers have wider applications in cooking.

As for the apple juice concentrate (bought at the healtfood store) use the same amount for sugar for this recipe.

When baking other recipes I usually use this formula for apple juice concentrate:
~ 3/4 C apple juice concentrate = 1 C sugar
May have to reduce your other liquids in the recipe if the batter seem to moist.

Sorry I took so long typing answering your questions but I am new to the net and I do not have the cookbook with me today. So I had to go back and forth from your response to my response to get the recipe. Each time I did I lost the message I was typing to you.
