Recipe: Chocolate Coffee Drops (cookies using Kahlua, 1987)

CHOCOLATE COFFEE DROPS

1/3 cup margarine, softened
1/3 cup sugar
1 egg
3 tablespoons Kahlua (or other coffee-flavored liqueur)
1 tablespoon skim milk
1 1/2 cups all-purpose flour
2 tablespoons Dutch process or unsweetened cocoa powder
1/2 teaspoon baking soda

Cream margarine in a medium bowl; gradually add sugar, beating well. Add egg, Kahlua, and milk; beat well. Set aside.

Combine flour, cocoa powder, and baking soda; gradually add to creamed mixture, stirring just until blended. Drop dough by rounded teaspoonfuls 2 inches apart onto cookie sheets that have been coated with cooking spray.

Bake at 375 degrees F for 8 to 10 minutes. Remove from cookie sheets, and cool on wire racks.

Makes 3 dozen
