Recipe: Ned's Eggplant Sticks

NED'S EGGPLANT STICKS

3 lb eggplant
3 large eggs, beaten
1/4 cup milk
1 cup Italian seasoned breadcrumbs
1 tsp salt
1 tsp pepper
oil for frying

Peel and cut eggplant into 3x1/2-inch sticks. Soak in ice water a half hour.

Mix breadcrumbs, salt and pepper in a shallow dish. Combine eggs and milk in a shallow bowl.

Dip eggplant into combined egg and milk, then in crumbs; chill 30 minutes.

WHEN READY TO COOK:
Heat oil to 350 degrees at a depth of 1-inch in large fry pan.

Cook sticks 10-12 at a time until golden brown, turning once, about 2 minutes. Drain on paper towels.
