Recipe: Apple-Apricot Chops (crockpot)

Apple-Apricot Chops
Crockpot Casserole

2 lb pork filets or chops
1 cup chopped apple
1 cup chopped dried apricot
1/2 cup fresh or dried cranberries (optional)
1 med onion chopped
2 x celery ribs sliced in 1/2" pieces
1/2 cup apple juice
1/2 cup brown sugar
1/4 cup dry sherry or wine (or more apple juice)
Salt to taste
Freshly-ground black pepper to taste
1 1/2 tbl cornstarch mixed with
2 tbl cold water

Combine all ingredients; cover and cook 7 to 9 hours on LOW. A half hour before serving, pour liquid into a separate container to skim off excess fat. Stir in cornstarch mixture and return broth to crockpot. Continue cooking on LOW until smooth and thickened.
This recipe yields 4 to 6 servings.
