HOOSIER COFFEE CAKE
"This recipe may be prepared ahead and refrigerated (unbaked) until ready to bake. The baked cake reheats well in the microwave as well."
1/3 cup packed brown sugar
1 1/2 cups sugar, divided use
1 teaspoon ground cinnamon
2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup (1 stick) butter, softened
1 cup sugar
2 eggs
1 teaspoon vanilla extract
1 cup sour cream
Preheat oven to 350 degrees F. Grease a 13x9-inch baking dish.
Combine the brown sugar, 1/2 cup sugar and cinnamon in a small bowl; set aside.
Sift the flour, baking powder, baking soda and salt into a bowl; set aside.
Cream the butter and the remaining 1 cup sugar in a large mixing bowl until light and fluffy. Beat in the eggs and vanilla. Add the flour mixture alternately with the sour cream, mixing well after each addition.
Spread 1/2 of the batter in the prepared baking dish. Continue layering with 1/2 of the brown sugar mixture, remaining batter and remaining brown sugar mixture.
Bake at 350 degrees for 20 to 30 minutes or until the coffee cake tests done.
Makes 6 to 8 servings
