APPLE FRITTERS
2 large apples (your choice), peeled and diced
1 egg, slightly beaten
1 1/2 cups self-rising flour
1 1/2 tsp baking powder
1 tsp salt
1 cup corn oil (for frying)
powdered sugar (optional)
Combine the apple and egg; set aside.
Stir all the dry ingredients together. Add the dry ingredients to the apple mixture, stirring slowly.
Heat the oil in a large skillet over medium heat.
Drop the batter by tablespoons into the hot oil, one layer at a time. Fry on each side for about 2 minutes until golden brown. Drain on paper towel.
Dust with powdered sugar if desired.
Makes 16 to 18 fritters
